VINIFICATION:
-
Selective hand harvest carried out at the optimum moment of phenolic ripeness.
-
Grapes are transported to the winery in small 20-kg boxes.
-
Stored for 24 hours in a cold chamber at 4°C.
-
Grapes pass through a sorting table to process only those bunches in the best condition.
-
After destemming, berries are selected one by one on a vibrating sorting table, eliminating unsuitable ones (raisined or underripe grapes, etc.).
-
After a light crushing, the grape must is lightly sulfited and pumped into a new 4,000 L French oak vat (Quercus petraea) of very fine grain.
-
Numerous pump-overs and punch-downs are performed to achieve optimal extraction of color and tannins.
-
Maceration lasts 4–5 weeks, depending on the evolution of the newly fermented wine.
-
Spontaneous malolactic fermentation in barrel.
-
Aged in the same French oak vat for 14–16 months.
-
Bottled and aged in bottle for approximately one year before release to the market.
TASTING NOTES:
-
A wine with a moderately intense red color, showing clear violet hues typical of its current youth.
-
The aroma is initially very intense and complex, revealing blackberries, raspberries, mulberries, and redcurrants, all wrapped in a spicy background. After slight aeration, its complexity deepens with subtle violet notes and, above all, its characteristic rose aroma, a hallmark of its unique terroir.
-
On the palate, it is more concentrated than in previous vintages. A broad, mature tannin immediately envelops the palate, caressing it with a pleasant texture. This is an extraordinarily unctuous wine, leaving a very persistent finish that evokes all its aromatic richness.
