My cellar in Lausanne is small, and that is what makes it precious: we sit down, we open a bottle, we talk. In Gstaad too, by appointment. Each appointment shaped around its table.
Vertical tasting with Fiona Fischer in Lausanne
The same wine, several vintages, side by side: the best way to understand what time does to wine. I pour the years from the library and tell you about each one, at a single table.
The location is secret: I send you the address with your confirmation. The wines of the evening can be ordered on the spot, delivered for Christmas.

I come to you with bottles from the library and tell the story of each vintage at the table, to you and your guests: a vertical, a dinner, a celebration. In Gstaad and throughout Switzerland. Price on request.
Your chalet cellar
I put together your chalet’s cellar for the season: the vintages, magnums for long tables, whites and rosés for lunches. When you arrive, a tasting to open the season; through the winter, I top it up whenever needed. You no longer have to think about it.

Create your own wine
An evening in my cellar, and you leave with a bottle that exists nowhere else, labelled with your name.
On the table, three carafes: Grenache, Cariñena, Syrah. I tell you where each one comes from. Then it’s your turn: you taste, you measure, you start again, until you find the blend that feels like you. It is exactly what I do every year in the cellar, on a smaller scale.
